10-Minute Pantry Egg and Rice Stir-Fry

Ingredients
- 2 cups cooked, cooled rice (ideally day-old)
- 3 large eggs
- 1 cup frozen peas
- 1 medium onion, finely chopped
- 2 tbsp soy sauce
- 1 tbsp neutral oil
- 1 tsp sesame oil
- Salt and black pepper
- Optional: 1 sliced spring onion
Instructions
- Heat neutral oil in a wok or large pan over high heat. Add the onion and stir-fry 2 minutes until soft and translucent.
- Push the onion to one side. Crack the eggs into the empty side and scramble quickly with a spatula until just set, about 1 minute.
- Add the rice and frozen peas. Stir-fry for 3-4 minutes, breaking up any rice clumps, until everything is hot.
- Drizzle soy sauce and sesame oil over the rice, toss to coat, and season with salt and pepper. Finish with spring onion if using.

Why use day-old rice?
Day-old rice has dried out a little in the fridge, which is exactly what makes it fry instead of steam. Fresh hot rice releases too much moisture and turns gummy in the pan. If you only have fresh rice, spread it on a plate and chill for 20 minutes before stir-frying.
Can I make this without eggs?
Yes. Crumbled firm tofu seasoned with a pinch of turmeric is the closest swap and keeps the recipe vegan. Edamame or cubed tempeh also work and give you a protein hit without the egg. Tell CheffEye Pantry Mode you have no eggs and it will pick the right substitute.
