Whisk tahini, lemon juice, garlic, 2-3 tbsp water, salt and pepper into a pourable dressing.

Boil pasta in well-salted water until al dente. Reserve 1 cup of pasta water before draining.

Off the heat, add drained pasta to the guanciale pan. Pour in the egg mixture and toss vigorously, adding splashes of pasta water until silky.

Toss tofu with 1 tbsp soy sauce. Pan-fry in 1 tbsp olive oil over medium-high heat, 3 minutes per side.
Whisk peanut butter, remaining soy, lime juice, maple syrup, garlic and water into a pourable sauce.
